All the Best, Healthy Turkey Day Recipes

I’m not really sure what season it is since I’m in Florida and it’s still 80 degrees. I’m traveling to PA for the holiday and am excited about boots, vests, scarves, doing a turkey trot, relaxing and most of all seeing my family. I love this time of year!

I’ve actually had the opportunity to test out a few recipes for a little pre-thanksgiving dinner I made this past weekend for Jonathan’s family. Let me tell you these recipes were AMAZING and I’ll definitely be making them again. I’ve never cooked and entire Thanksgiving on my own, and this time I think I nailed it. Plus….why not indulge in all the Thanksgiving goodness without feeling bad about it?!?! Alright, now for the recipes that you’ve all been asking me about…

Menu

Main Dish

Turkey (I cheated and ordered one from Whole Foods but made my own rub)
For the rub I used a combination of: salt, paprika, ground mustard, fresh thyme and fresh sage.
Good news is that I just needed to heat it in the oven for 1 hour (it was only 6lbs)

Sweet Potato Unstuffing from Real Food Dietitians

This actually tasted like real stuffing…and there was NO BREAD!!

Green Beans with Fig Vinaigrette (Whole30)

Super easy recipe. Blanch 1-2lbs of green beans and toss with this fig vinaigrette:
1/4 cup white wine vinegar
1/4 cup balsamic vinegar
1/2 teaspoon mustard powder
1 clove of garlic (minced)
3/4 cup olive oil
1/4 cup dried figs
2 teaspoons thyme (I used fresh)
salt and pepper to taste


Crockpot Mashed Potatoes

I made this one up as I went, but I just bought a bag of mixed mini potatoes and tossed them in the crockpot with some olive oil and salt. When they were done I mashed them with some butter, 2% milk and mixed them all up. Super easy and you could make these the day before.

I also substituted Gluten Free flour for regular flour and they turned out just as good. I bought this bag from WholeFoods.

    1. They all turned out so well and are super easy to make. You can even prep everything the day before to save time. Let me know if you try any of these or other healthy ones.
